Corn and Cheese Chowder: Shortcuts to the Pioneer Woman Recipe

Here are some easy shortcuts to make this delicious Corn & Cheese Chowder recipe. Perfect for even the busiest mom!

The temps are finally dropping, there's a coolness in the mornings, and pumpkins are everywhere.  It's a sign of autumn!!  With that, it's time to gather your favorite soup recipes and warm your soul.

One of my favorite soup recipes is Pioneer Woman's Corn and Cheese Chowder.  I was hesitant to try it at first, but just one bite had me hooked!  Since we all live busy lives being Superwoman, I'm sharing some shortcuts to this wonderful recipe.

These are the delicious ingredients for your soup.

I use about half a bag of frozen bell peppers and onions and finely chop them.  Stick them in a stockpot with melted butter and saute.  Add in a jar of bacon bits and cook together.  It's going to start smelling so wonderful!!!

Next, add in 3 cans of corn with bell peppers, drained.  Stir everything together for about a minute.

Sprinkle flour evenly over top and stir.

Add broth and stir well.  Let it thicken for a few minutes.

Stir in half/half and turn heat to low.

Simmer for about 15 minutes.  Stir in cheeses and chopped green onions.  Add salt/pepper if desired.  Even a dash of season salt adds some more scrumptious flavor.

Serve in your favorite bowl or even a bread bowl and enjoy!!!  Even Superwoman needs to have a fabulous bowl of soup every now and then.

Corn and Cheese Chowder

4 Tbsp. butter

1/2 bag frozen bell pepper and onion

3 cans of corn with bell peppers, drained

1 jar of Hormel bacon bits

1/4 cup flour

3 cups chicken broth

2 cups half and half

1 cup grated monterey jack cheese

1 cup grated hot pepper jack cheese

1/3 cup sliced green onions

Melt butter in stockpot over medium heat.  Saute chopped onions and bell peppers.  Add in jar of bacon bits and cook for a couple minutes.  Stir in drained cans of corn.  Sprinkle flour evenly over the top and stir to combine.  Add broth.  Let thicken for a few minutes.  Mix in half and half and turn heat to low.  Simmer for about 15 minutes.  Stir in both cheeses and green onions.  Add salt, pepper, and season salt, if desired.
