I love summer produce! The fruits are sweet and the veggies... yum! After picking up 25 pounds of peaches at our local food co-op, I was on the hunt for innovative ways to eat them (because as much as I would have liked, peach cobbler was not an acceptable choice for each of my 3 daily meals). I came across a recipe for peach and watermelon salsa served over tomatoes, and I was intrigued. So I got to work, tweaked it a little, and came up with a quite yummy recipe: Spicy Peach and Watermelon Salad over Fresh Tomatoes. I'm drooling just thinking about it.
Here's how it goes (if you want to skip to the recipe, just scroll down!):
First, in a medium to large bowl, mix together 1 tablespoon lime zest, 1/4 cup lime juice, and about 1/2 cup of your favorite fruity jalepeno jelly. I used Raspberry Jalapeno jelly, and it turned out delicious.
Prepare all of your fruit...
Cube 1/2 small watermelon. TIP: Cut your watermelon half into two slices. With rind still on, cut slices through the watermelon both parallel and perpendicular to your body, making about 1" x 1" squares. Then, run your knife between the rind and the flesh to cut off the rind, leaving cubed pieces! Perfect!
Peel, pit, and cube 3 peaches. If you read my recent recipe post on the Mini Pavlova with Peaches and Blueberry Sauce, I shared this little tid bit on peeling peaches:
Next, add your watermelon, peaches, and just a smidge (less than 1/4 cup) shredded basil to your pepper jelly mix. Toss to coat well.
Slice a ripe organic vine-ripened tomato and put slices in a small bowl or cup. Add your spicy peach and watermelon salad over your tomatoes. Garnish with a sprig of basil for presentation.

Now, to summarize, here's the full recipe:
- 1/2 cup spicy fruit and pepper jelly (ie Raspberry Jalapeno Jelly)
- 1 tablespoon lime zest
- 1/4 cup lime juice
- 2 cups cubed seedless watermelon
- 1 cup peeled, pitted, and cubed peaches
- <1/4 cup shredded basil, fresh
- 3-5 vine-ripened tomatoes, sliced into bite size pieces
- Mix together hot fruit and pepper jelly, lime zest, and lime juice.
- Add in watermelon, peaches, and basil. Toss well to coat.
- Put tomatoes in bottom of small bowl or cup. Top with Spicy Peach and Watermelon salad mix.
